Blueberry Bundt Cake

I have had a bundt cake pan for some time now and haven’t used it yet. I decided that I had to do something about that.  I went into the kitchen and routed through the fridge and cupboards to see what I could come up with. I decided on a blueberry bundt cake. I always have blueberries, it’s our favourite fruit.

I always try to make something we will all eat. My daughter is picky but she loves blueberries and cake and of course likes to help this Mama Bear bake.

I sat down and prepared my list of ingredients and began making our evening snack.

Servings 1 cake

Ingredients

  • 2 cups blueberries
  • 1 cup sugar
  • 1 pkg cream cheese
  • 1 tsp baking powder
  • 1/2 tsp Salt
  • 1 tbsp Vanilla
  • 2 cups flour
  • 3 eggs

Instructions

  1. Preheat oven to 325 degrees Spray or use butter to coat pan and set aside
  2. In a medium bowl combine 2 3/4 cups of flour, baking powder and salt, mix together and set aside.

  3. In a large bowl blend the butter, cream cheese and sugar together by hand or with an electric mixer. Add in eggs and vanilla. add 1/4 flour over blueberries and fold into batter

  4. Pour batter into pan

  5. Bake in oven for 60 -70 minutes or until toothpick comes clean

  6. Let cool and serve.
