Who doesn’t like Mac n Cheese? A comfort food for many. This is my first attempt at homemade Mac n Cheese.
1 pkg (454-500g)
2 cups of grated cheese ( I used 1c cheddar and 1c Monterey Jack)
1/4 cup flour
2 cups of milk
1/3 cup minced onion
1/4 cup breadcrumbs (seasoned)
2 tbsp butter
1/3 parmesan cheese
2 cups Veggies ( I used peppers)
1 cup Vegetable broth
Boil noodles and veggies for about 10 minutes or according to pkg. Preheat of to 350 degrees. Grease 9×13 dish.
In a large, heavy skillet, melt butter, add onion and cook over low heat about 1 minutes, add flour and cook another minute, or until the flour well combined. Add milk and vegetable broth and whisk, turning heat to medium-high until it comes to a boil; cook until the sauce becomes smooth and thick. Season with salt and pepper.
When the sauce is thick, remove from heat, add 1 cup of cheese plus/parmesan and mix well until cheese is melted, add cooked macaroni and mix well. Pour into prepared baking dish. Top with grated cheese and breadcrumbs.
Bake for 15-20 minutes, then broil for a few minutes to get the breadcrumbs golden.
