Who doesn’t like Mac n Cheese? A comfort food for many. This is my first attempt at homemade Cheesy Mac and Cheese.
Ingredients
1 pkg (454-500g)
2 cups of grated cheese ( I used 1c cheddar and 1c Monterey Jack)
1/4 cup flour
2 cups of milk
1/3 cup minced onion
1/4 cup breadcrumbs (seasoned)
2 tbsp butter
1/3 parmesan cheese
2 cups Veggies ( I used peppers)
1 cup Vegetable Broth

Directions
Boil noodles and veggies for about 10 minutes or according to pkg. Preheat of to 350 degrees. Grease 9×13 dish.
In a large, heavy skillet, melt butter, add onion and cook over low heat about 1 minutes, add flour and cook another minute, or until the flour well combined. Add milk and vegetable broth and whisk, turning heat to medium-high until it comes to a boil; cook until the sauce becomes smooth and thick. Season with salt and pepper.
When the sauce is thick, remove from heat, add 1 cup of cheese plus the parmesan and mix well until cheese is melted, add cooked macaroni and mix well. Pour into prepared baking dish. Top with grated cheese and breadcrumbs.
Bake for 15-20 minutes, then broil for a few minutes to get the breadcrumbs golden.
I made enough for our meal that evening and 2 extra personal sized dishes to put in the freezer for another time.
