Every once in a while, I have cravings for desserts that don’t include chocolate. This time I wanted to try something a little bit different from what I would normally make. Since I had limes and cream cheese, that’s where I would start. Finally deciding on a Lime Cream Cheese Crumble Cake.
Lime Cream Cheese Crumble Cake
Prep Time 25 minutes
Cook Time 35 minutes
Total Time 2 hours
Servings 12 squares
Ingredients
Cake layer
- 11/2 cups flour
- 1/2 cup milk
- 2 tbsp lime zest
- 2 tbsp lime juice
- 1/4 tsp Salt
- 1/4 tsp Baking Soda
- 1/3 cup oil
- 2 tbsp baking powder
- 2 eggs
- 1 tbsp Vanilla
Cream Cheese Layer
- 1 8 oz pkg cream cheese softened
- 1/4 cup sugar
- 1 tbsp lime zest
- 1 `egg
- 1/2 tsp Vanilla
Crumb Top
- 1/4 cup butter melted
- 1/4 tsp Salt
- 2/3 cups flour
- 1/3 cup sugar
Instructions
Cake Layer-Bottom

Preheat oven to 350 degreesGrease 8x8 pan and set aside

In a large bowl mix together the dry ingredients

In another bowl, mix together the wet ingredients

Combine the dry and wet ingredients together

Spread mixture on the bottom of greased pan
Cream Cheese Layer

Combine cream cheese and sugar and mix until creamy

Add in remaining layer ingredients

Add mixture onto the cake layer in spoonfuls
Crumble Topping

Add ingredients to melted butter until mixture resembles a crumble Sprinkle onto cream cheese layer and place in oven

Bake for 35 minutes and cool

Garnish with limes and mint leaves and serve
