I have had a bundt cake pan for some time now and haven’t used it yet. I decided that I had to do something about that. I went into the kitchen and routed through the fridge and cupboards to see what I could come up with. I decided on a blueberry bundt cake. I always have blueberries, it’s our favourite fruit.
I always try to make something we will all eat. My daughter is picky but she loves blueberries and cake and of course likes to help this Mama Bear bake.
I sat down and prepared my list of ingredients and began making our evening snack.
Blueberry Bundt Cale
- 2 cups blueberries
- 1 cup sugar
- 1 pkg cream cheese
- 1 tsp baking powder
- 1/2 tsp Salt
- 1 tbsp Vanilla
- 2 cups flour
- 3 eggs
Preheat oven to 325 degrees Spray or use butter to coat pan and set aside
In a medium bowl combine 2 3/4 cups of flour, baking powder and salt, mix together and set aside.
In a large bowl blend the butter, cream cheese and sugar together by hand or with an electric mixer. Add in eggs and vanilla. add 1/4 flour over blueberries and fold into batter
Pour batter into pan
Bake in oven for 60 -70 minutes or until toothpick comes clean
Let cool and serve.
