When I buy a turkey, I usually buy a big one. This way there is enough leftovers for a few freezer meals. There are so many different recipes for leftover turkey. We like to make a variety of meals with our turkey leftovers. One of our favourite meals is turkey pie.
I use this recipe for a variety of meals including turkey soup and turkey ala king.
Turkey Pie
Turkey Pie made with leftover turkey
Servings 4
Ingredients
- 2-3 Cups Turkey chopped
- 2 Pie Shells Frozen
- 2 cups chicken stock add more as needed
- 3 tblsp Corn starch to thicken
- 1 1/2 cups mixed vegetables your choice - I used carrots and corn
- 1 tsp black pepper
- 1 tsp poultry seasoning
Instructions

Preheat oven to 375 degrees Prepare pie shells by putting a few fork marks on the bottom to stop from sticking.

Chop up turkey into pieces and place in a large pot. Add enough stock to cover turkey and let simmer on med/low heat. Add 3 tbsp of corn starch to start and continue simmering.

Add more cornstarch as needed to thicken. Add seasonings and veggies and continue cooking on low heat until desired thickness achieved. Remove from heat

Fill one shell with the turkey filling and the other for on the top. Cut a few slits in the top for steam.

Bake in oven for 35-45 minutes until crust is golden brown
