There is always a debate in my house on which flavour of muffins I should make. I always want blueberry and my daughter wants chocolate chip. Although she does like blueberries, she just doesn’t like them in muffins. I wanted to use the frozen berries up in the freezer before I buy more since they just happen to be on sale this week. In my freezer, I had a few blueberries and half a bag of mixed berries, including blueberries. I decided to use just the cherries and blueberries to make my berry explosion muffins. My daughter ate the strawberries and raspberries which weren’t included in my muffins and I can now buy more frozen fruit.

Ingredients
- 2 cups flour
- 2 large eggs
- 1/2 cup butter
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup blueberries
- 1/2 cup cherries
- 1 cup milk
Instructions

Preheat oven 350°

Spray or grease muffin tin (extra large 6 muffins)

In a large bowl mix together butter and sugar until it is creamy.

Add in the salt and baking powder then add eggs, 1 at a time mixing well

Add flour and milk blending together.

Fold in the berries and fill muffin tins

Bake for 30-35 minutes.
Recipe Notes
If you are using a 12 muffin pan, reduce the time of baking to 15-20 minutes.

Muffins! I love them so much! These would be a perfect way to start off a day. My kids would eat these muffins morning, noon and night. I also love how easy they are to bake. I will keep this recipe for the kids when I am flying solo for a month this summer.
