Ginger Beef

I am always thinking of different flavourful meals to make. I love the taste of Ginger, so when I recently bought a roast I decided to try Ginger Beef. I used what I had in the house, here is how I made it.

Ginger Beef

1 2 lb roast or any other meat of your choice
1/4 cup Hoisin or plum sauce
1/2 cup beef or vegetable stock
2 tbsp soya sauce
2 tbs vinegar (rice vinegar if you have)
2 tbs vegetable oil
3 cloves garlic minced
1-2 carrots thinly sliced or veggies of your choice
1 red pepper sliced add green for extra colour
2 green onions thinly sliced
2 tbs ginger
2 or 3 pieces of candied sugar thinly sliced

Combine stock, hoisin, vinegar, soya sauce and cornstarch. Toss the meat in 1/4 cup of mixture and set aside.

In a heavy skillet or wok heat 1 tbsp of oil over high heat, add beef in small batches and cook for 2 minutes or until browned with a bit of pink. Remove and place in a bowl.

Add 1 tsp of oil to the pan. Reduce heat to medium and stir in garlic and ginger for about a minute. Add carrots and peppers and 1/4 cup of water, continue cooking covered for 4 minutes to steam until tender.

Return meat to the pan and add remaining sauce until thickened stir in onions.

Serve over rice or noodles.
