I like to bake but not always from scratch. Who has the time? If I am going to bake from scratch I usually set a day aside to do so. When I go shopping, I tend to pick up cake mixes when they are on sale. I usually have 3 or 4 boxes in the cupboard at one time. I rarely follow the recipe on the box unless we want cake or cupcakes. I like to create something quick and easy for a snack. I normally don’t buy Lemon cake mix, however I really wanted to try something different, so I created the Lemon Cinnamon Loaf.
Lemon Cinnamon Loaf
Lemon cinnamon loaf made with a cake mix

Ingredients
- 1 box Lemon Cake Mix
- 1 box Instant Vanilla Pudding
- 1/2 cup sugar
- 1 tsp Vanilla
- 3 tsp cinnamon
- 1 3/4 cup icing sugar
- 3 tbsp milk add extra milk a tbsp at a time as needed
- 3/4 cup Water
- 4 eggs
- 3/4 cup oil I used 3/4 mayo as a substitute as I had no oil.
Instructions

Preheat oven to 350 degrees Combine all ingredients in a large bowl (except sugar and cinnamon) Mix until well blended

Pour enough batter to cover bottom of each bread pan. Add a layer of sugar/cinnamon mixture add more batter and top with remaining sugar mixture bake in oven for about 40-45 minutes and remove from oven and cool

In a small bowl mix together milk and icing sugar and drizzle over Lemon Cinnamon loaf, slice and eat
