Mama Bear’s Beefy Stew – StoveTop

Winter is here and so are those long cold days that come with it. During the winter time, I like to prepare meals ahead of time and freeze for those cold snowy days. Beef Stew is one of them. There are so many different recipes I have found for making my Beefy Stew, here is my way of preparing a delicious comforting meal.

Mama Bear's Beefy Stew

Ingredients

  • 1 pkg Stewing beef
  • 6-8 potatoes - diced
  • 1-1/2 cups flour
  • 1 box beef stock
  • 1 onion - chopped
  • 1-2 tbsp oil
  • 2 cups vegetables - I used frozen mixed
  • 1 tbsp Oregano

Instructions

  1. Rinse beef in strainer and place on cutting board to trim fat, cut large pieces into smaller ones.

  2. In a large pot add some oil and heat at medium. add 1 chopped onion to the pot 

  3. While the oil is heating take about a cup of flour and place into a bowl. Take the pieces of beef and put into flour, coating each piece completely.

  4. Place coated beef into the heated pot of oil to brown. Add beef stock and or water as needed. Once beef is browned, begin adding more stock and water. use leftover flour to thicken as you go along.

  5. Reduce heat and simmer for about an hour. Continue to add water and flour to get the desired thickness of stew.

  6. Peel, cube and wash vegetables that you have chosen. After Stew has simmered for an hour add vegetables, continue cooking on low heat until the potatoes have been cooked completely.

  7. Remove from heat and serve. ( I serve ours with garlic bread)

Winter is almost finished and soon it will be spring. Enjoy a bowl of stew before it is too warm outside to really enjoy it.
